Gustavo De Jesus owns El Retiro which sits in El Hato in the Caicedo region of Colombia. The area has a particularly high elevation, sitting around 2200 meters above sea level and possessing outstanding soil for coffee production. Gustavo and his two children take care of the farm and attribute a ton of the success of the coffee quality and yield to the unique climate of the region.

This washed coffee exhibits a ton of chocolate notes right at first sip. Slightly bitter baking cocoa and high % dark chocolate are paired well with a super sweet raspberry jam flavor. There's also some fresh stone fruits and papayas in the finish which compliment the sweetened condensed milk finish. Works well on basically any brew method but was particularly exciting as an aeropress.
