Finca Santa Isabel sits near the town of San Cristobal Verapaz in Coban, Guatemala. The farm was first acquired by Luis Valdes II's great grandfather in 1875. Through the generations the farm had been sold to a third party but returned back into the lineage in 1960 - starting the coffee plantation we know today in 1965.

The farm has grown many varietals over the years, focusing heavily on proper growing & processing practices and has even placed in Guatemala's Cup of Excellence twice.

Lots of rich chocolate flavors in this lot, with a really nice finishing flavor of toasted barley. The brightness is subtly sweet like a meyer lemon or a pomegranate. There's also a bit of root beer and interesting herbal flavor as the coffee cools.
