The Itumpi AMCOS (basically a cooperative) combines a handful of varietals from its 174 members and their farms. The coffees are mostly Kent, N39 and Bourbon types and are grown between 1670 and 1950 meters above sea level. This particular lot is a peaberry preparation, meaning that the coffee is sorted in such a way that most of the beans are peaberries. Peaberries are the funny round beans which are a product of both seed halves in a coffee cherry 'forming' together during maturation. There's not necessarily anything inherently better about peaberries over standard half seeds, but the level of sorting and prep work leads to a very evenly sized and very clean lot of coffee, which makes our job roasting a hell of a lot easier.
